List of ingredients:

  1. one kg chicken with bones
  2. one and half cup oil
  3. one cup yogurt
  4. four big size onions
  5. two tablespoons garlic paste
  6. two tablespoons ginger paste
  7. red chili powder, salt, turmeric powder
  8. spices: 7 green cardamon 3 black cardamon,4 cloves, 2-inch cinnamon stick, 1 tablespoon black peppercorns, two tablespoon cumin
  9. two lemons (juice)
  10. one tablespoon coriander powder
  11. green coriander, green chilies(for garnishing)

Follow the steps to make an easy and delicious chicken korma; let’s cook!

Step 1: Fry onions

 

Take 4 big-size onions and cut them into fine slices then put them into the deep pan and add one cup oil, start to fry on medium flame until it turns golden brown. After frying onions put into the grinder or blender jar, add half a cup water, and blend until it becomes a smooth paste.

Note: Frying onions is the most important part of making korma because it enhance aroma of korma, keep stirring a spoon and set a medium flame don’t turn high flame. Don’t forget onions should be golden brown not dark brown. The taste of the korma becomes light bitter if the onions over-fry.

Step 2: Fry chicken

Put a deep pan on a medium flame and add half a cup oil,2 tablespoons garlic paste, and 2 tablespoons ginger paste, meanwhile stir the spoon, after one minute add all the spices; green and black cardamon, bay leaf, cinnamon stick, cumin, cloves, black peppercorns after adding all spices fry one more minute.

Step 3: Add Yogurt

Add chicken, and fry chicken with all these spices for 5 minutes. After this add one cup of yogurt, red chili, salt, turmeric powder, coriander powder and lemon juice after adding all these things cook until the chicken absorbs all the yogurt and leaves the layer of oil. keep the stirring spoon carefully.

Step 4: Add onion paste

Add onion paste and 1 cup water, mix well, cover, and cook for 30 minutes until the chicken becomes tender and soft.

You can taste the korma and add red chili and salt according to your taste if you like spicy.

Step 5: Korma is ready

When you see the layer of oil and chicken become tender your delicious korma is ready.

Garnish with green coriander leaves and green chopped chili, you can add finely chopped ginger. Serve with naan, sheermal and cumin rice.
