- Preheat oven to 180 degrees Celsius for 20 minutes
- Mix both sugars and oil and whisk using a stand mixer, hand mixer, or a hand whisk would work just fine.
- Then add 4 eggs one by one. Add 1 teaspoon of vanilla extract at this stage and beat till everything is nicely mixed.
- Sift the flour, salt, and cocoa powder and fold into the wet mixture of sugar, oil, eggs and vanilla extract. Do not over-mix, stop when you don’t see streaks of the dry ingredients.
- Coat the roughly chopped chocolate with flour. This would prevent them from melting into the batter while baking. Fold in the chocolate into the batter.
- Line one 8×8 inch pan using parchment paper. If you don’t have parchment paper, oil the pan and sprinkle flour to cover the whole pan. Make sure to remove the excess flour by turning it upside down and tapping on its back.
- Bake it on the top grill for 25-27 minutes or until the center is not jiggly. The baking time may vary so the best way to avoid overbaking is to take the brownies out of the oven when the center is not jiggly.
- Let it cool for 30 minutes and enjoy your delicious, fudgy, chocolatey brownies. Serve with a scoop of ice cream.
